It stems from a desire to preserve the authentic flavors of Piedmont, those recognizable by their intensity, authentic ingredients, and hands that know what they're doing. Not nostalgia, but experience: a cuisine crafted with method, knowledge, and respect for those who sit at the table.




Tasting Menu

Tasting trio: Raw beef, Fassona beef topside with tuna sauce, peppers with anchovies. First course: Hand-rolled egg tajarin with traditional Asti ragù. Second course: Veal cheek stew with Barbera d'Asti. The stew simmers for hours in Barbera wine. It was once said that it was ready only when the aroma wafted into the courtyard. Drinks and cover charge not included.

Risotto with raschera cheese, ossobuco, and gremolata

A dish that combines elegance and tradition. The rice is creamed with Raschera DOP cheese. The slow-cooked ossobuco completes the dish with its tender meat and rich, deep cooking juices, while the gremolata—chopped parsley, lemon, and garlic—adds freshness and harmony.

Grilled polenta with cod in green sauce

A Piedmontese-style meeting of land and sea. Polenta, slowly cooked and then grilled to a crispy, golden crust, accompanies cod al verde, prepared with parsley, garlic, and extra virgin olive oil as per tradition.

A historic dish, a symbol of conviviality and patience in the kitchen. Snails, purged and slowly cooked, are served with butter, parsley, and garlic according to the classic French recipe reinterpreted with a Piedmontese twist.
